Preliminary Day of Radiant Goddess e-Course

Since I did my shopping for the first week of the Radiant Goddess e-course yesterday, I decided to start eating the menu today instead of waiting until the official start of the course tomorrow. I'm glad I did. It turned out to be a good warm-up for me.
Breakfast was an incredibly delicious smoothie featuring spinach, banana, and blueberries plus a few other ingredients. The blueberries were frozen, which didn't make my blender very happy, but it coped, and the end result was a milkshake texture with OMGdess delicious flavor. That was a great start!

For mid-morning snack, I had a nice honeycrisp apple.

Lunch was a coleslaw (green cabbage, red cabbage, grated carrots) with a nut mayonnaise. The recipe called for macadamia nuts, but I hadn't found any of those at the grocery yesterday. I also hadn't been able to find raw cashews, so bought some lightly salted ones. I tried using those in the dressing (along with the pine nuts in the recipe). I think raw cashews would have worked well. The roasted flavor was okay, but a little overwhelming for the other ingredients in the mayonnaise.

By the time I got around to the afternoon snack, it was early evening. (Such are my days.) I mixed up some guacamole for the vegetable dip, and cut some carrot, celery, and parsnip sticks. The guacamole had way too much red onion for my taste, but it was a particularly strong onion, so perhaps that was the problem. I had never tried parsnips raw before--not bad, but not my favorite.

I never got to the scheduled dinner recipe.

I've decided to start again tomorrow and repeat today's recipes. I've got leftover coleslaw, so I'll use lunch preparation time to get a jump on dinner preparation. I'm also going to remake the guacamole with less (or maybe even no) onion.

Overall, I'm feeling great. I felt really tired early afternoon--kind of a poisons-spilling-out feeling--but I took a short nap with my grandson and my energy right now feels very similar to how I felt first thing this morning. Yay!
